There is no one best template, it depends on what kind of a player you are and how you plan on using it.
I use a template of
GM mage/med/wrestle/resist
GM vet (eventually)/taming/lore
has all the taming skills you need and all the necessary magery defensive skills. some people like to change up resist or vet for eval or hiding. i don't really find those skills of much worth, especially with invis jewelry and the firepower of a bunch of dragons...

Hiding is the best skill a tamer can have. You stay hidden and you will never pull agro, it will always go on your pets. It is easier to gate out when you are hidden (can't be targeted right away).
Makes it almost impossible to stop a recall. (you hide and cast recall during the reveal cast time)
Bina is a "blue PK" in that I have eval over resist or vet. I like to be able to finish people off with spells if the dragons or wyrms fail. I often have a separate character who has stealth, and vet (and holds my loot).
Hiding
Taming
Lore
Wrestle
Magery
Eval
Med

GK has hiding too i believe. It really is invaluable.

GK and I both use hiding, it really is invaluable. Keeps people from finding me a TON, and allows my dragon/white wyrm to get all the aggro.
Template:
Magery
Meditation
Wrestling
Hiding
Animal Taming
Animal Lore
Veterinary

Yea invis items are FAR more powerful than the hiding skill since they can be used regardless of distance from attacker. The only reason I'd take hiding is if I would be doing a lot of semi-AFK farming or had to run away from my computer a lot...
Here's my template :

Didn't want to deal with GMing Vet so went with 88 vet (90 with stat bonuses) / 12 eval - could probably get by with even less Vet
You don't really need Vet if you can get a ton of dragons, but with the stable dilemma it's not as easy to have a 20-30 dragon turret. Vet does come in handy if you have <10 dragons. The mana/regs you save from healing is worth the skill points

Is wrestling really necessary for a tamer I was thinking taming, lore, magery, med, resist, eval, vet. That or keep wrestling and drop eval, any ideas?

Well the OP mentioned PVM, so Wreslting > Eval in that regard.
And if you want Eval, I'd still take Wrestling and instead drop Vet - you'd have more of a PVP Tamer in that case.
You're gonna want wrestling - if your dragons get distracted you're gonna get hit by any melee 100% of the time. That's a killer
With Wrestling/Resist/Invis items/Dragons, you have to be a complete idiot to die.

GM taming is like a drunken one-night stand. You think about your plans all day, about how you're gonna pick up the hottest girl, spend all night buyin drinks and laying down your lines, then success... and then you wake up wondering what the hell were you thinking.

Try macing instead of wrestling and here is why.
1.) The primary objective in fighting a tamer is to seperate him/her from his pets to keep them from protecting the tamer and also to keep the tamer from healing/controlling the pets. This is usually done by focusing everything on the tamer in constant interrupts. G-Heal charged mace weapons and Potions allow you to heal interrupted, where normally you would be running about for oppurtune moments to cast.
2.)The primary goal defending as a tamer is to pin the target in to be manhandled by your pets. Stamina drain and charged weapons such as GhoulsTouch, and Lightning amongst others can be utilized when they would otherwise not be in a defensive position if you had wrestling instead. (not to mention softening up ar for your pets to dig deeper...both ar damage and stamins drain are still inflicted even without tactics or anatomy)
Using your pets as your primary melee, and keeping your team together you will find you will have more then enough time to cast things like Meteor Swarm, or Greater Heal etc. because no one wants to stand near a good Monstrous Team of Pets for long...except you. Otherwise you would try to stay healed running around avoid dumps and dexxers while worrying if you will ever be able to stay close enough to your pets long enough to bandage, or hoping you can swing a gate to escape.
Even if you don't have tactics or anatomy. Macing may very well be a good option. The downfall, you have to be better equipped.
