include the dexxers, maybe let them bring 2-3 cure pots
otherwise the mages can just poison and gheal themselves until you die

Of course dexxers should be allowed. Trust me, there are plenty of disadvantages to dexing to balance out the awesome offense.
Arena size will be extremely important, because obviously the dexxers advantage in a small arena is easily proven through mathematics to be a major disadvantage in a large arena.

The arena size is the size of my tower top.
Take a trip to it and check it out. It's almost done with decorations.

Agreed. Dexers are at a disadvantage without cure potions. The only change that would make any sense is adding cures... otherwise leave it the same.

Ok. So heres what I'm going to do.
The first tournament will be everyone admitted. However, the rules will be the same for everyone as they are posted currently on the site.
Depending on how it goes will determine if cure pots will be admitted in the next tournament.
May take a few trials but we'll find the sweet spot that everyone enjoys.

Scary thing is, I look like him in RL. Probably 200 times complete strangers have told me I look like him.

Just go by the standard set ups and allow people whatever template they want. The standards have been good enough for 10+ years, there's a reason for that.
Standards being:
7x No pots.
7 skills
Gm weapons/armor
No pots
No poisoned weapons.
7x Pots/magics
Magic weapons/armour allowed
Poison weps allowed
everything goes basically.
