Also if you want the NPC to hit you(the only reason for that would be to work up parry or healing faster) then you need to do it in a house because the NPC will be grey.
Directions for Town Melee macro
Type "all guard me" (this will flag the NPC grey)
Attack the NPC
Type "all follow me" (this will turn the NPC back to blue so others don't kill him)

"all stop" stops them from guarding you; they go blue 2 minutes later

"All Stop" doesn't turn them back to blue after 2 minutes (edit: unless you stop attacking them).
Meanwhile I'll vouch for hiring a paladin, the gains are fast (28 to 66 in 2.5 hours this morning and still gaining steadily). If you're auto-healing the paladin, remember that as your wrestling skill (and strength if you're not already at 100) improves, you deal increasing amounts of damage. So occasionally you'll need to shorten the timer between heals.
Postscript: Took about 7 hours to GM wrestling vs. a paladin hireling, from around 28 that I bought to 100. I healed the paladin myself, starting with about 31 anatomy and 32 healing (the healing increased to 46 during this process). Took about 700 bandages with that level of anatomy and healing (with 100 dex). Also went from 68 strength to 97 strength. Also raised intelligence a bit. I had to use TWO paladins - I destroyed the armor of the first one and it was more expensive to heal him than just hire a new paladin @ 103 gp/day.
All in all, a great training session not just for wrestling but for stats and healing. This thief is now 6x GM so lock up your stuff!

I couldn't work out how to make my NPC mage turn back blue, so I ended up doing the following:
Your new character is called A, your healer is called B.
-Hire the NPC with character B.
-Tell the NPC to attack character B. Then tell it to stay.
-Attack the NPC on character A, then tell it to stay on character B.
After 2 minutes the NPC will go blue. You can heal it during this time without flagging grey.
