"all attack" = "all kill"
Use Search to find more about "all kill" here. In short, don't use it. Call each pet individually for it.
"all guard me" is sort of wacky. I don't know the rules for it. I think, if a pet is guarding you, it needs to see a monster attack you from that point onwards for it to respond. So, if an ettin is already wacking away at you, and you say "all guard me", sometimes they will just sit there and watch.
"all follow me" works very well, as you'd think it would. Likewise with "all stay".
