Not too computer savvy, but I'd like to be able to get the server to work on my Mac laptop instead of my PC desktop.
Is there a separate client that I need to download in order to get it working?

I think most people are doing it with BootCamp.

Yes it is. and there's a plenty ways to do that.
1. VMWare/Parallels - makes possible to run a Windows virtual machine in a Mac OS X's window.
3. Bootcamp - makes possible to install Windows on a Mac
2. Wine/CrossOver - makes possible to run Windows apps without using the previous two things, a bit laggy.
I would choose the first way, it's a bit pricey though. In this case you wont need to reboot your machine to play UO (like Bootcamp).
